Vinification
Manual harvest in 20 kg crates. Destemming and subtle grape crushing. Pressing with control temperature at 12ºC and inerting with CO2 (4-5h). Alcoholic fermentation at 16-18ºC. Malolactic Fermentation. Transfers and rest. Coupages. Proteic stabilization. Tartaric stabilization and filtering. Bottling.
