Tasting note
Delicate and light-bodied Pinot Noir, textured wine with complex flavors: cherry, raspberry, mushroom and forest floor, plus vanilla and baking spice. Rich and juicy.
Viticulture
Vineyards planted in 2000, southern hemisphere, latitude -39, at a low altitude, abundant water, wide thermal amplitude and constant winds. It comes from the María Paula plot.
Clay-loam soil with rock deposits dragged from the Andes. Groundwater at 1.20 meters deep.
Vinification
Manual harvest, 50% destemmed, rest left whole for spontaneous fermentation. Mid-fermentation pressing for a gentle, lightly-extracted wine. Malolactic conversion in second- and third-fill 500L barrels, 11-month maturation, bottled without filtration.
Food Match
Red meats like duck and lamb, or white meats like turkey, pork and chicken. Fuller-flavored fish like salmon go well too.
