Tasting note
Delightful floral and brioche notes combine with zesty citrus fruit, honeysuckle and elderflower, finishing with just a hintof sweetness.
This wine has the sophistication of Champagne with the lightness, fresh feel of Prosecco, yet it is made in glorious England!
Viticulture
The vines are planted on gentle slopes of sandstone, which aids drainage and provides good mineral pick up for our two sites, Foxhole and Pookchurch. The grapes are handpicked and the press wine, which would otherwise go to waste, is re-distilled to produce Gin and Vermouth.
Vinification
20% of the hand-picked fruit was crush-destemmed and 80% whole-bunch pressed. the juice was cool fermented in stainless steel for around 14 days. The wine aged on the lees for a minimum of 12 months prior to disgorgement in order to accentuate fruit.
Food Match
Perfectly complements seared tuna, salmon en croute or chicken risotto.
