Viticulture
Organically farmed in a Mediterranean Climate.
Vinification
Parcels of Merlot were fermented separately and underwent full malolactic fermentation before being combined to create the final blend. Aged for 12 months in 45% new oak and 55% previously used oak.
Food Match
Great on its own or when paired with barbecued meats such as Italian-style sausages with a rich tomato sauce.
