Viticulture
The grapes are grown on soils of clay and limestone pebbles and sand caused by erosion from mount Sainte Victoire.
Vinification
Mechanically harvested in the cool hours around dawn, direct pressing of the grapes followed by cold settling. 14C fermentation in cement followed by a period at 18C. No oak.
Food Match
Amazing as an aperitif, it also matches perfectly with Mediterranean gastronomy and asian meals, like sushis, spring rolls or Asian stir fried beef.
