Tasting note
Soft, supple Merlot from south-west France, popping with red berries, trailed by flower petals and a hint of pepper.
Viticulture
Vineyards located in the sun drenched South-West region of Bergerac, planted on gravel, limestone and clay soils known locally as 'Boulbenes'. Its this soil combination that allows development of structure and flavour.
Vinification
Initial low temperature (15°C) for a few days enhances flavor extraction. Cool fermentation (2 weeks, 26°C) with daily pumping-over. Preserves fruity aromas and supple tannins. After fermentation, wine is drained to stainless tanks for malolactic fermentation and aging. Components are racked out and blended.
Food Match
Well matched with roast poultry, barbecues, summer lunches, and many cheeses. Best served at 16°C.
