Viticulture
Traditionnal manual viticulture, pruning, trimming, debuding, green harvst, harvest by hand. Natural weeding by soil plowing and ship grazing. Sortimg of the grapes in the field.
Vinification
Gentle direct pressing, alcoholic fermentation in thermo‐regulated tanks, malolactic fermentation & natural clarification. Resting on lees for 8 months before bottling.

Great with fish, crustaceans, white meats, green vegetables & soft cheeses.
