Tasting note
This new cuvée is an ode to the richness of the seaside schist terroir and the secret blends for which the Domaine is renowned. These unique characteristics give it a duality that is both oriented towards the finesse expected of a Provence rosé but also very much focused on the fruit in a precise tasting.
Viticulture
Traditionnal manual viticulture, pruning, trimming, debuding, green harvst, harvest by hand. Natural weeding by soil plowing and ship grazing. Sortimg of the grapes in the field.
Vinification
Free run juice, alcoholic fermentation in thermo‐regulated tanks, malolactic fermentation & natural clarification. Resting on lees for 8 months before bottling.
Food Match
Great with fish, crustaceans, white meats, Mediterranean cuisine.
