Tasting note
Easy-drinking white made from Cataratto, a gentle, quaffable Sicilian grape variety; this is lightly perfumed with white blossom and herbs, with refreshing lemon on the tongue.
Viticulture
The grapes of indigenous varietals are grown in vineyards with good sun exposure, and subject to warm summer days which impart tropical, honeyed flavours. Harvests are done at the end of August.
Vinification
Grapes are destemmed and then softly pressed in the pneumatic press. Fermentation takes place in stainless steel tanks for about 10/15 days at a controlled temperature of 18-20 ° C.
Food Match
An excellent wine to pair with light pasta dishes, salads and white meat.
