Viticulture
Grapes are destemmed and then softly pressed in the pneumatic press. Fermentation takes place in stainless steel tanks for about 10/15 days at a controlled temperature of 18-20 ° C
Vinification
Grapes grow in vineyards high on the hills of the Valle del Belice that are situated between 100 and 300 meters high in the South West of Sicily. The grapes are of indigenous red varietals and are carefully selected. A milder climate, with high temperature variation influences the ripening of the fruit and ensures aromas are retained.
Food Match
The ideal accompaniment for Italian cheese, cured meats, sausages and Mediterranean finger food.
