Viticulture

Vinification
The grapes are destemmed entirely and cold macerated for 2-3 days. Spontaneous alcoholic fermentation occurs, followed by 5-8 days of skin contact. Malolactic fermentation finishes in tanks before transferring to barrels and concrete tanks. Aging lasts 7-9 months in stainless steel, concrete, and used French oak.
