Viticulture
This wine is made from selected plots on sandy soils on the edge of the appellation Châteauneuf-du-Pape, at short distance from La Crau plateau. The vines are grown without pesticides or insecticides and manure is natural. The land is worked without herbicide to maintain ventilation and flexibility to the soil. Yield of 46 hl/ha.
Vinification
Aimé Sabon first established his cellar in 1973 and now owns a total of 50ha including 13ha in Châteauneuf-du-Pape. The best sites are planted on a mix of galet stones, sands and clay and provide exceptional fruit. The wine was allowed to mature in 80% barriques with the Roussane in oak for 6 months in total.
