Viticulture
Rocky soils, Andes irrigation, extreme thermal shifts (22°C), dry climate, and ample sunshine define our terroir. With minimal rainfall, cold nights, and hot days, our wines exhibit intense colour, aroma, and flavour with a distinctive fruity character.
Vinification
Manual harvest in 18kg bins, pre-fermentation maceration at 8°C in stainless steel tanks.Use of both native & selected yeasts for the fermentation process, followed by a 30-day post-fermentation maceration. Malolactic fermentation with oak contact, 70% aged 12 months in oak (70% American, 30% French), 30% in stainless steel.
Food Match
Ideal with grilled beef dishes and game meat. Slow-cooked stews from all corners of the world would pair exceptionally.
