Vinification
Fincas Notables, a Calchaqui Valley gem, undergoes manual harvest, hand selection, and pre-fermentation maceration in French oak vats. Alcoholic fermentation, post-fermentation maceration, Malolactic fermentation, and 15-month aging in new French oak barrels. Light filtration, plus an extra 6 months of aging, culminate in a remarkable release.
