Tasting note
Silky, vibrant Garnacha from northern Spain, perfumed with liquorice, roasted herbs and spices, followed by a satisfying mouthful of blackcurrant, cherry and smoked meat.
Viticulture
Franck Massard, the UK's 1996 top sommelier, transitioned from serving to crafting wine. He honed his skills with the Torres family before launching his Priorat venture in 2004. He's committed to organic viticulture, nurturing vineyard harmony for exceptional wines.
Vinification
The grapes were fermented at a temperature range between 24 C and 26 C. We gently extracted the flavour and other compounds by pumping-over (2 per day) and the total maceration time lasted 3 weeks. The wine was bottled after 6 months in contact with fine lees in stainless-steel tanks.
Food Match
El Mago's light to medium body makes it a very versatile pairing for food. Would go very well with grilled chicken dishes but also can stand up to grilled red meats. Pairs superbly with Spanish cured meats.
