Viticulture
Emilio Rojo, an icon wine, epitomizes small-scale viticulture. From a 1.2-hectare plot, each vine is individually harvested, yielding Spain's finest unoaked white. On the northern Avia river slope, slow ripening enhances Treixadura, Lourero, Godello, Lado, and Torrontes skins, balancing natural sugar and acidity for exceptional flavor.
Vinification
Each vine handpicked, undergoes cold soak, then microvinified in small batches, sometimes less than 100 L. Emilio meticulously blends varietals from diverse deposits to craft the ideal yearly blend, epitomizing artisan winemaking.
