SENSORY ANALYSIS.
COLOUR: brilliant and intense purple red.
BOUQUET: fresh and clean. Fragrant waves of small red berries, dark cherry and ripe red grape. TASTE: fleshy and plumpy, the fruity aspect fills the mouth together with a lovely and balsamic acidity.

Vinification
With utmost care, grapes were handpicked and cooled with dry ice to prevent oxidation. Pellec selector removed impurities. Fermentation occurred in oxygen-free Ganimede vats with CO2-assisted reassembly. March bottling, preserving quality with organic corks. No chemicals used; eco-friendly measures against pollutants
Food Match
PAIRING: ideal as an aperitive, even slightly cool. Reccommended to have with fresh string cheeses and charcutrie. Excellent also with grilled vegetables.
SERVING TEMPERATURE: Serve at a temperature of 18°C.
