Tasting note
Rounded yet delicate dessert wine from Tuscany, made to drench the sweet, nutty, dunkable biscuits called cantucci, this is filled with raisins and nuts and wonderfully aromatic.
Vinification
Grapes harvested in mid-September, dried on local reed mats ("graticci"). By late Dec to early Jan, juice becomes sugary syrup, reaching 18-19° Bé (sugar-water ratio). Grapes softly pressed, concentrated must stored with "madre" (natural yeasts) in oak kegs (1-2 hl) for ≥3 yrs. Separated from "madre," aged 2-3 yrs in smaller oak kegs (0.65 hl), then bottled
Food Match
14°-15° with 'cantucci' (dry Tuscan almond biscuits); at 10°- 12° with appetizers and starters (aged and ripe cheeses) and on its own as a meditation wine. To be served in glasses with ample bowl and narrow top.
