Tasting note
Pure, beguiling Chardonnay from Australia's Mornington Peninsula, a heady blend of white nectarines, white flowers, lime juice and crystallized ginger.
Viticulture
Kooyong's largest block, Faultline, primarily Chardonnay. Soils: friable dark brown loamy clay. Gently sloping, bounded by a geological fault. Well-drained, high organic matter before the fault. Faultline Chardonnay offers richness, fullness, textured generosity, and Kooyong's inherent minerality.
Vinification
Gently whole-bunch pressed grapes into French oak barriques (15% new). Spontaneous fermentation with ambient yeasts, aged on lees (no battonage) for 11 months, minimal racking pre-bottling. Unfined, lightly filtered.
Food Match
Enjoy alongside roast chicken with preserved lemon or thyme-crusted pork.
