Tasting note
A classic Burgundian Chardonnay. Ripe apple and citrussy acidity, followed through with a toasty and creamy moutfeel. A classy and sophisticated example of St Aubin.
Viticulture
Given Nicolas’ passion for terroir all of his growers are either BIO certified or farming lutte raisonée, enabling him to continue producing his exceptional terroir driven wines. For this wine the average age of the vines is 12 years. The vineyard is on clay and limeston soil, which is South-West facing and at an altitude of 350m.
Vinification
Hand picked followed by careful sorting. Aged in French oak barrels and fined using betonite.
