Vinification
Un-irrigated vineyards in Agter-Paarl and premium Stellenbosch on Malmesbury Shale soils. Hand-harvested, cold maceration, 5-day fermentation in stainless steel with pumpovers. Pressed, malolactic fermentation, 50% aged in 300L American oak barrels (25% new) for 12 months. Fined, filtered before bottling.

Goes well with a wide range of foods, particularly red meats and pasta. Serve at a cool room temperature.
