Tasting note
The 2022 shows native finger lime, blossoming jasmine and silver needle white tea. It’s followed by tart orchard apples and chalky minerality with powdery texture. There is delicate precision and handling with the wine finishing with 5 grams of residual sugar, some decent palate weight and lingering length.
Viticulture
From a viticulturist perspective, we strive for low-intervention grape growing and wine-making practices. We aim to utilise Mother Nature at every step of the growing season and believe that good canopy management is vital in producing cool climate wines that stand out from the rest.
Vinification
Harvested at night to retain as much fruit characters as possible. Grapes are pressed as soon as they arrive at the winery and settled overnight in tank before being racked off the solids. Wines are all natural fermented with indigenous yeast.
