Viticulture
All of the soils on Devon Crest are deep and well drained with a high clay content. The vineyards are unirrigated often resulting in lower yields but offer greater fruit purity and depth. The vintage of 2015 was spectacular and the wine certainly stays true to this. Average yield 6 tons/ha.
Vinification
Fermented with natural yeasts and made in classic, minimal interventionist manner with no extended skin maceration. All the components were vinified separately and matured for 18 months in a selection of first, second, third and fourth fill French oak barrels and racked at intervals as necessary.
Food Match
Ideal to enjoy with game birds like quail, guinea fowl and duck. Lamb suits the wine’s herbal touches.
