Tasting note
A refined aromatic medley of elderflower and hawthorn blossom with nuances of crisp Mediterranean citrus, apricot and melon, along with subtle impressions of wild herbs and almonds. Crisp fruit and a tangy acidity are gloriously abundant in the mouth, concluding with a finish that is long-lingering, elegant, and beautifully balanced.
Viticulture
Vineyards are located in Passirano, at the foot of the Monterotondo and Fantecolo hills, with east-southeast exposure.
Vinification
After a 12-hour gravity settling at 15°C, must inoculated with yeasts. Fermentation in steel & oak, malolactic. Cuvée assembled, liqueur de tirage added, bottles capped for prise de mousse. Cellar-aged 24 months before riddling. Sediment removed, Brut-style liqueur d’expedition, corked & wired. Released two months later.
