Opens with vibrant, crisp aromas—citron, grapefruit blending gracefully with hawthorn, honeysuckle, verbena. Hints of iodine. Notes of white peach, gooseberry. Youthful effusion carries to full-volumed, taut palate. Energetic, lively finish
Vinification
Gently pressed clusters, keeping first and second fractions apart. After 12-hour settling at 15°C, must inoculated with organic cultured yeasts, ferments partially in steel and small oak barrels, with malolactic fermentation. Cuvée assembled in spring, liqueur de tirage added, bottles capped, laid down for prise de mousse.
