Tasting note

Viticulture
Vineyards are located near the village of Passirano, at the foot of the Monterotondo and Fantecolo hills, with east-southeast exposure. Undulating terrain in a glacial-origin bowl, with loose soils of medium fertility, with medium-deep gravel-pebble mixture
Vinification
Gently pressed clusters, separating first and second fractions. After 12-hour settling at 15°C, must inoculated with cultured yeasts, ferments—part in steel, part in small oak barrels, undergoes malolactic fermentation. Spring assembly of cuvée, addition of liqueur de tirage, bottles capped and laid down for prise de mousse.
