Vinification
The Chardonnay fruit is whole-cluster pressed with indigenous yeast fermentations. them the wine is aged Sur lie aged with weekly stirring
then 100% is malo-lactic fermentation in barrel
in Burgundian French oak barrels (40% new; 60% 1-2-year old) . Bottled without filtration to preserve the wine’s aromas and flavours and enhance ageing potential.
