Vinification
Naturally frozen Cabernet Franc grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration (a short skin contact for colour and complexity), then 70% of the wine is aged in stainless steel

Savor with paté, foie gras, or spicy Asian dishes. Try with olive tapenade, fruit desserts, or blue veined cheeses. Perfect with blueberry tarts and dark chocolate.
