Viticulture
Proximity to Lake Ontario allows for full ripening of grapes while retaining acidity. Total icewine vineyard size 250+ hectares . 544 vines/ hectare planted North /South to maximize sunlight. Trellis/ Canopy: Scott Henery/ VSP. Pruning 2-4 cane kniffen
Vinification
Naturally frozen Riesling grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration. The wine is aged 100% in stainless steel.

Serve chilled at 8 - 10°C. Peller Riesling Icewine enhances paté, foie gras, salty appetizers, and mild blue cheeses. Essential for fruit-based desserts.
