Viticulture

Vinification
The must underwent a pre-fermentation maceration using the bleeding method; this involved the free run juice and skins macerating for 12 to 18 hours at a temperature of 12-14 °C, a process designed to maximise colour and aroma extraction. A second traditional fermentation occured in the bottle, followed by ageing on the lees for around 15 months.
