Tasting note
Fragrant New Zealand Riesling, dry yet floral, flavoured with elderflower, lime and lemon peel and with a lovely, vibrant citrus acidity.
Viticulture
Hand-harvested Riesling from the Pisa and Bendigo subzones of Central Otago. Farming follows organic principles, making use of livestock to eat grass and add manure to enrich the soil.
Vinification
Destemmed fruit is combined with whole bunch clusters during fermentation. Each vineyard site and clone is fermented separately in tank and before being blended.

Goats cheese souffle, sashimi, pan-seared snapper, ceviche.
