Tasting note
Riesling grown on the volcanic soil of Mount Etna in Sicily and correspondingly fresh and mineral, fragrant with apple, lemon, yellow flowers and plums.
Viticulture
The land has a perfect aspect and position, black with lava sands, and thus extraordinarily rich in minerals; surrounded by woods and more recent lava flows. Vines are planted at an altitude of 815 m a.s.l. and the yields are 60 quintals per hectare. The density of planting is 5000 per hectare and the training system if guyot.
Vinification
The grapes are picked into crates and immediately refrigerated at 8⁰C, selected by hand and sent for a light destalking and soft pressing, the decanted must is racked and inoculated with yeasts and ferments at 15⁰C in inox stainless steel, the wine thus obtained remains on the fine lees until June with continuous stirring.
Food Match
Lively acidity and pronounced fruitiness complement 'pure' flavours like mackerel, dentex, rice dishes, greens, sashimi, or ethnic cuisine like quesadilla.
