Viticulture
Grapes from Béziers, Gaillac, Pézenas, and North l’Aude. P&A aids suppliers in Organic transition, using non-Herbicides. Sexual Confusion prevents moths. Tractor work in vineyards, wines vinified separately with Stéphane and Nicolas. Vines aged 15-25 years, 6000/ha density, clay-limestone soil, 50 hl/ha yield, mechanical harvest.
Vinification
Winemaking: Burgundian winemaking techniques. All the grapes are destemmed before 15 days of maceration. The grapes are then pressed. Elevage occurs with 1/3 of the Cuvée in steel tank. 1/3 is aged for 8 months in oak and then 8 months in steel tanks and the final 1/3 is aged for 8 months in steel tanks and then 8 months in oak.
