Viticulture
Grapes are picked from vines of 25-80 years of age.
Vinification
The grapes are gently whole-bunch pressed in baskets. Fermentation takes place at between 16-17 degrees C for around 4 days.

Perfect chilled and drunk on its own as an aperitif, or with salads, fish and spicy dishes.
