Bull Paddock Vineyard, Dillons Point, Marlborough, once for bulls, now yields top Sauvignon Blanc. 2023's cool, unstable weather challenged, but patience yielded ripe grapes with concentrated flavors and classic acidity.
Vinification
Bull Paddock Vineyard, near our winery, reduces skin contact pre-pressing, preserving fruit flavors. Grapes gently pressed, batch fermented in stainless steel with selected yeast for enhanced aromatics.
