Tasting note
Aromas of blackcurrant, red plum and blackberry with a hint of black olive. On the palate, the brambley black fruit is evident supported by fine grained tannins. A hint of savouriness with a touch of spicy oak.
Viticulture
2018 was a fantastic year in the Yarra Valley, particularly for medium and full bodied red wines. The grapes were sourced from a number of vineyards in the Upper and Lower Yarra Valley. The long, mild autumn allowed for picking of all varieties at their optimal ripeness.
Vinification
All varities were vinified separately. The grapes were destemmed and lightly crushed and given a 2 day cold soak prior to fermentation in static and open fermenters. After malolactic fermentation in tank, the wines were aged separately in French hogsheads with an average of 30% new oak.
Food Match
Oven baked barbeque beef ribs.
