Viticulture
Sourced from the clay rich Raupo vineyard, located in the centre of the Southern Valleys. This vineyard has a gentle northwest facing aspect and enjoys high sunshine hours and minimal rain. The vineyard is farmed following organic and biodynamic principles.
Vinification
Organic grapes, meticulously hand-harvested, pressed gently, and naturally fermented. Batches cold settled for 24-72 hours, then aged with fine lees in barrels and puncheons. After 10 months, a harmonious blend is crafted with 10% new puncheons. Pure, clean, and distinctive in every sip.
Food Match
Fantastic with salmon fish cakes or freshly caught crab, cheese-based salads or pumpkin ravioli.
