Tasting note
Complex with ripe red fruits, figs, ripe plum skins and sweet spices. Decidedly full-bodied, with everything kept exceptionally fresh with the trademark crushed-stone minerality one expects from Santorini wines. Incredible length and balance. A special wine.
Viticulture
Mavrotragano is an indigenous grape variety of Santorini. Traditionally it had been used in small quantities in the blends of sweet red wines, so there was only a small number of old vines left. Sigalas' belief in Mavrotragano's quality led to them planting a high-density vineyard in 2002 (5.5-7.5k plants/acre). Aged for 18 months in new and old French oak.
Vinification
Long lasting extractions in French Oak barrels of 500 lt and 300 lt and 225 lt under controlled temperature. Aged for 12 months in French oak.
Food Match
Roasted or stewed red meat, rich Mediterranean dishes, strongly flavoured aged cheese.
