Viticulture
Mavrotragano, indigenous to Santorini, historically used in small quantities in sweet red wine blends. Domaine Sigalas planted an experimental high-density vineyard in 2002 to preserve this variety's quality. Handcrafted winemaking, aged 18 months in new and old French oak barrels.
Vinification
Long lasting extractions in French Oak barrels of 500 lt and 300 lt and 225 lt under controlled temperature. Aged for 12 months in French oak.
Food Match
Roasted or stewed red meat, rich Mediterranean dishes, strongly flavoured aged cheese.
