Viticulture
Sospiro’s Pinot Grigio vineyards are located north of Verona, at an elevation of 250 to 300 metres that ensures good sunlight exposure with a cool climate, retaining acidity and delicate fruit flavours. Harvests take place at the end of August.
Vinification
Pinot Grigio grapes are crushed in parcels and left to cold macerate, giving the wine its distinctive salmon blush. Each parcel is macerated for a different length of time and blended after fermentation, ensuring a standard colour. Fermentation occurs in temperature controlled steel tanks, and no oak is used throughout the process.
Food Match
Perfect drinking during the spring and summer months, this rose is a great match for salads, fish and light pasta dishes. Try it with grilled or barbecued chicken with a cous-cous salad, or enjoy with your favourite pizza.
