Tasting note
Appearance: Dark purple colour
Nose: Blackberry and ripe cherry notes, with black pepper and toasted hints.
Palate: Medium bodied with silky tannins and a long pleasant finish.
Vinification
Grapes harvested at 23-24 ° Brix in April at 20 tons/ha. Inoculated with selected yeasts, vinified < 28 °C. Pumpovers ensure colour and fruity character. After fermentation, wine aged on wood for 3 months, aiming for intense fruit and smoothness.
Food Match
Perfect with Beef stew and pastas with mushroom.
