Tasting note
Lifted aromas of berry fruits, dark cherry, five spice and deep cacao chocolate combine seamlessly with a sweet fruit palate that showcases all the elements present on the nose. The bright fruit acidity drives freshness on the palate where the fine 'old vine' tannins gently resolve with a subtle savoury earthiness and complexity.
Viticulture
Sourced from a network of vineyards located throughout the Barossa Valley, from vines up to 100 years, grown on a range of soil types. The younger blocks are planted utilising modern trellis systems, while the oldest Grenache and Mataro vineyards are dry grown bush vines.
Vinification
A Grenache, Mataro (Mourvedre), and Shiraz blend. Open fermenters encourage whole berry presence. Pumped over twice daily, gentle extraction of flavors, colors, and tannins occurs until pressing off skins after 7 days. Batches mature individually in seasoned hogsheads for 18 months before meticulous blending and bottling.
Food Match
Versatile and exuberant, the Joshua pairs well with charcuterie and carpaccio dishes whilst it also sits well with asian inspired spice dishes.
