Tasting note
From prime single parcels and select vintages, 'The Righteous' Barossa Mataro is bold, rich, and spicy. Complex savory fruits on the nose, ripe berries, fruit-driven spice, and dark chocolate on the palate. Fine, long, and delicious, a pure example of Barossa Mataro with well-integrated French Oak.
Viticulture
Sourced from a 80 year old vines in the Moppa district of the Barossa, these vines are planted on bony and depleted soils - all factors that lead to a small crop of wonderfully expressive and intensly flavoured fruit.
Vinification
This prized parcel is fermented in a small open where it is pumped over by hand twice daily. Gently pressed to tank and racked to a mix of 30% new and seasoned French Oak Hogsheads for 18 months prior to careful blending.
Food Match
A fitting centre piece to accompany rich and flavoursome meat dishes, this wine would also suit reflection alongside a selction of fine hard cheeses.
