Viticulture
Sourced from selected parcels planted between 1998 and 1999 in Hutton soils (decomposed granite) at a density of 3200 vines per ha. Vineyard practices include vertical hedge trellising, pruning to 2 bud spurs every 15cm and supplementary drip irrigation.
Vinification
Harvest was carried out by hand.The bunches were de-stalked and the berries hand sorted before crushing and fermenting in stainless steel tanks. Pump overs were performed for 6 days before a further maceration of 5 days. After pressing, the wine was then racked to 50% new French oak barrels for malo-lactic fermentation and 20 months ageing.

The intense berry fruit in this wine make it an excellent partner to dishes like roast turkey or try with a fine piece of British beef.
