Viticulture
These vines are grown in the Los Arboles vineyards in the Uco Valley. Organic practices are followed as they aim to preserve the natural properties of the grapes by eliminating the use of chemicals, herbicides and fungicides.
Vinification
Hand-harvested grapes undergo destemming, fermentation, and maceration in small concrete tanks for 25 days at 23-25ºC. After a gentle pneumatic pressing and natural malolactic fermentation, the wine ages for 15 months in a blend of French and American oak barrels before being filtered and bottled.

Try it with a home-made “chivito” sandwich: thinly sliced rib steak, thick slabs of pancetta, onions and ham.
