Viticulture

Vinification
Fruit is harvested by hand following a process of careful bunch selection. After destemming, the juice undergoes fermentation with wild yeasts in small concrete vats for 25 days at 26-28ºC. Natural malolactic fermentation takes place followed by ageing for 18 months in new French oak barrels. The wine is further aged in bottle for 12 months
