Viticulture
Sierra Cantabria, marking 150 years, merges history with innovation. Numanthia and San Vicente projects have redefined Rioja. Vinification
Hand-de-stemmed grapes, rigorous selection. 6-day cold pre-fermentation maceration. Fermentation in 5hl French oak barrels, then 10hl oak vats with native yeast from own vineyards. Pigeage and punching-down twice daily for 6 days. Malolactic in barrel. 24 months in new French oak Bordelaise barrels.
Food Match
Classic match with slow-cooked, roast lamb. Also pairs well with Indian spicy food as well as Moroccan spicy dishes, chorizo, manchego cheese and game such as phesant and partridge.
