Viticulture
Vignobles Dubard's 83-ha vineyard overlooks the Dordogne, with 37 ha dedicated to 25-year-old white varieties. Closely planted vines on calcareous-clayed soils employ integrated farming for optimal maturity and harvest quality. Sauvignon Blanc, rich in aromas, thrives, yielding consistently excellent fruit.
Vinification
Upon arrival, grapes are de-stemmed and undergo a 12-hour cold maceration for skin contact. Gently pressed, juice settles for 2 days before racking. Slow fermentation for 3 weeks enhances fruit characters. After maturation, the wine is lightly fined, and tanks are blended for the final product.
Food Match
Coeur du Mont white, clean and fruity, can be enjoyed on its own, or will form an ideal accompaniment to seafood dishes, summer salads, apetizers and buffet meals. This white wine is an early drinking style, best in the first 2 years.
